Singapore chili prawns
Ingredients
Medium sized prawns 1/2kg
Oil 1/4cup
Chicken stock 1 cup
Finely chopped onions 1
Finely chopped fresh red chilies 2
Beaten eggs 2
Finely chopped spring onions 2
Finely chopped green chilies 4-5
Finely chopped garlic 4-5
Finely chopped ginger 1
Sugar 1tsp
Fruit vinegar 1tbsp
White pepper 1/4tsp
Black pepper 1/4tsp
Tomato ketchup 2tbsp
Chili garlic sauce 3tbsp
Oil for frying
Method:-
Wash 1/2kg prawns .Heat oil and fry the prawns in batches or until golden brown Finely chop 4-5 green c hilies,2 spring onions,4-5 cloves of garlic,1 piece of ginger and 1 medium sized onion
Heat oil in a wok and fry the chopped vegetables. Now whisk in 2 beaten eggs .Add 1 cup chicken stock,3tbsp chili garlic sauce,2tbsp tomato ketchup,1tsp sugar,1tbsp fruit vinegar,1/4white pepper,1/4tsp black pepper and salt as required.
Cook for 2-3 minutes and add the fried prawns.
Serve the prawns over a bed of lettuce leaves or garnish the serving platter with finely chopped green chilies and spring onions.
